HOW TO MAKE COCONUT FRIED RICE

° Coconut milk
° Chicken
° Garlic
° Ginger
° Red bell (diced)
° Green bell pepper (diced)
° Carrots (diced)
° Green peas
° Green beans (diced)
° Spring onion (diced)
° Onion (chopped)
° Sweet maize
° Liver
° Salt
- Grounded pepper

Seasoning cubes

Curry powder

Thyme

Coconut/Vegetable oil
PREPARATIONS
• Wash and season the chicken, liver with some seasoning cubes, salt, curry powder, grounded pepper, thyme, blended ginger, garlic and onion. Cook for 10min, add some water and cook until it’s tender. Fry and cut the liver into smaller sizes.
• Wash the rice until the water runs clear. Transfer the rice into a pot, add the meat stock and coconut milk. Adjust with salt and seasoning cubes and let it cook until it’s done.
• Properly combine the rice together with the fried Vegetables. Garnish with some spring onion and serve.
